Kat’s Low-Carb Nut Meal Cakes
(Nut meals can be found at Trader Joes)

Almond Cake

2 C Almond meal
½ t salt
1 C Splenda plus ¼ C splenda or ¼ C sugar (this tastes a little better, but adds a bit of carbs)
1 t baking powder

4-5 beaten eggs (depending on size)
1 cube melted butter
1 t vanilla
½- 1 t almond extract (depending on how “almondy” you like it)

Add wet & dry ingredients separately.  Then mix together & poour into a greased & floured 8 x 8 pan.

Bake at 350 for 25 minutes.  (Toothpick will appear moist, but not goopy & center will not wiggle when you
shake the pan a little).

Hazelnut-Ginger Cake

Use above recipe, but substitute hazelnut meal, minus the almond extract, and add 1 t cinnamon & 1 t
ginger.

Maple-Walnut Cake

Use above recipe but substitute walnut meal for almond meal.
And substitute maple flavor (imitation) for almond extract.

Nut Meal Cookies

The same recipes can be used to make drop cookies if you add just a bit of flour to thicken the batter &
only bake for 14 min.).  (adds a bit of carb but makes a nice, moist cookie)
