Salads and Salad Dressings

Decadent, (tasting) Spring Mix Salad

Large Bowl of Spring Mix (Costco has a ready to eat box that is great)
4-6 T Olive oil (use regular, not extra virgin, because the taste is milder)
2-3 T Red wine vinegar
Salt & pepper to taste
Maple-Cinnamon Pecans or Sweet Spicy Pecans

Toss well and enjoy!!!


Kat’s Japanese Salad Dressing

Mix together:

¾ C unsweetened rice wine vinegar or red wine vinegar
¼ C ite soy sauce
1 t sesame oil
1 T ginger – powdered
1 t Splenda
¼ C chopped up pickled ginger
½ - 1 t wasabe (optional)
sesame seeds (optional)

Total fat from sesame oil = 3.7 g per whole batch
Total carbs form pickled ginger = 8 g per whole batch

This is a great dressing to make Chinese chicken salad or
Toss it with bean sprouts & sesame seeds or
On cucumbers or
Napa cabbage salad.

Not very good on spring mix lettuces however!
