A Note About These Recipes

When Christopher first saw me as a client in 1987, his evaluation of me indicated that I was hypo-glycemic
and highly
carbohydrate-intolerant.  Diabetes also runs in my family.  I started coming up with these low-carb
ideas because I have to live at 20 grams of carbs per day (yes, even when racing & on long-distance runs)
and it was getting pretty boring!.  Most of you don’t have to do that but staying at 15 g per meal can still be
challenging, so these recipes may help. Our family does use Splenda (sucralose), so here is a link if you are
concerned about that.   
What is Splenda.

Two words of warning here:

First of all, when I make these things I just start throwing ingredients together.  I do make notes eventually, but
they only list ingredients, not measurements.  When people started asking me for the recipes I had to go
back & try to come up with the exact proportions.  Therefore, I want to say that there is some “wiggle room”
to adjust to your own taste, ie: more or less Splenda, cinnamon, chili paste, etc.  I have gone back & tested
the measurements, so everything should work out!

Secondly, a lot of my ideas are “rescue recipes,” or things I can eat just before I reach the point of having a
“blow-it” item like candy, cookies, bread, or pasta.  So, many of the recipes are not low fat (you may have
already noticed that!).  Since I am always on a low-carb diet and my body produces
glucagon, not insulin, I
don’t gain weight or add cholesterol when I eat them.  I don’t eat high fat every day, but when I do, it’s ok.  
However, if you try to mix these low-carb, high fat items in with a higher carb diet (insulin producing) you  will
not only store (as body fat) the excess sugars, but also the extra consumed fat.

I do have a lot more recipes (some rattling around in my brain & some scribbled on notes) so I will try to get
more done.  In the meantime, enjoy these and please let me know about any fun variations you come up with
or new recipes all together.  We may have to eat like a
caveman, but we can sure have more fun with it than
they ever did!!!
